CHOCOLATE GLOSSARY – PART 1

El chocolate no está exento de usar terminología especial para nombrar los diversos procesos utilizados al preparar este delicioso producto. Por eso queremos compartir con usted ciertos términos y sus definiciones:
    • ● Emulsionar: mezclar dos elementos que no son miscibles (no se mezclan fácilmente) aplicando acción mecánica y fuerza energética.
 
    • ● Temper: melting cocoa butter to stabilize crystals. Tempered chocolate has a nice shine, is resistant to fat boom, and has a good ‘snap’ or ‘crack’ sound when broken.
 
    • ● Marble: combining two different mixtures of different colors and flavors, giving it a type of zebra or marbled look.
    • ● Deglaze: using temperature shock to lift what’s left at the bottom of of a pan, generally with liquid at a cooler temperature.
 
    • ● Refine: giving chocolate the final finesse and maximum expression of flavors and textures. The chocolate particles must have a very small dimension to make it feel subtle and soft on the palate.
 
    • ● Conche: disminuye cualquier porcentaje de agua, evapora todos los ácidos formados por el proceso de fermentación y crea un cambio notable en el color debido a la emulsión de los ingredientes grasos. El chocolate cambia de un estado espeso y pastoso a tener una textura líquida y fluida.
